Rosemary is without a doubt one of my favorite scents and flavors. Rosemary bushes are very common in my neighborhood and I can't resist rubbing my hands in the leaves when I walk past. I'm pretty sure all my neighbors think of me as the crazy bush petting lady.
We have a bush in our backyard, so rosemary makes it into a lot of my dishes and cocktails. It's lovely with most spirits and citrus fruits and imparts a perfect fragrant, herbal flavor to whatever you pair it with. The grapefruit rosemary simple syrup goes well with gin or vodka and soda as well.
Grapefruit Rosemary Sparkler
1oz Grapefruit Rosemary Simple Syrup (recipe below)
Juice of 1/2 a pink grapefruit (about 2oz)
Add first three ingredients to a cocktail shaker with ice and shake until cold. Strain over ice in a rocks glass and top with soda water (I used La Croix Pamplemousse). Garnish with a slice of grapefruit and a sprig of rosemary.
Grapefruit Rosemary Simple Syrup
1/2 cup sugar
2-3 fresh sprigs of rosemary
2-3 sections of grapefruit rind
Add all ingredients to a small heavy saucepan and bring to a boil, stirring to dissolve sugar. Lower heat and simmer for five more minutes. Remove from heat and allow to steep for another 30 minutes or so, before straining into a container. Store in the fridge for up to two weeks. This makes a small batch, which will 6-8 cocktails.
